Pe Byouk with Naan (Burmese Yellow Pea Breakfast)

Ingredients
- •2 cups yellow split peas, rinsed
- •6 cups water
- •1 tsp salt
- •1/2 tsp ground turmeric
- •2 large yellow onions, thinly sliced
- •1/3 cup vegetable oil
- •4 pieces naan bread
Directions
- 1Simmer the yellow split peas with water, turmeric, and salt for 35–40 minutes until tender.
- 2Heat vegetable oil and fry the onions for 12 minutes until deeply golden.
- 3Drain any excess water from the peas and mash them lightly.
- 4Reserve half the fried onions and stir the rest into the peas.
- 5Warm the naan in a dry skillet.
- 6Serve the pe byouk with naan and the reserved crisp onions on top.
💡 Cook the peas until soft but not soupy; the mixture should be thick enough to scoop with naan.
