Ingredients

  • 2 cups yellow split peas, rinsed
  • 6 cups water
  • 1 tsp salt
  • 1/2 tsp ground turmeric
  • 2 large yellow onions, thinly sliced
  • 1/3 cup vegetable oil
  • 4 pieces naan bread

Directions

  1. 1Simmer the yellow split peas with water, turmeric, and salt for 35–40 minutes until tender.
  2. 2Heat vegetable oil and fry the onions for 12 minutes until deeply golden.
  3. 3Drain any excess water from the peas and mash them lightly.
  4. 4Reserve half the fried onions and stir the rest into the peas.
  5. 5Warm the naan in a dry skillet.
  6. 6Serve the pe byouk with naan and the reserved crisp onions on top.

💡 Cook the peas until soft but not soupy; the mixture should be thick enough to scoop with naan.
