Peach Cobbler

- •6 cups fresh or frozen peaches, sliced
- •3/4 cup granulated sugar
- •1/4 cup brown sugar
- •2 tablespoons all-purpose flour
- •1 teaspoon vanilla extract
- •1/2 teaspoon cinnamon
- •1 1/2 cups all-purpose flour
- •2 teaspoons baking powder
- •1/2 teaspoon salt
- •6 tablespoons cold butter, cubed
- •3/4 cup whole milk
Directions
- 1Preheat oven to 375°F. In a large bowl, combine peaches, granulated sugar, brown sugar, 2 tablespoons flour, vanilla, and cinnamon. Pour mixture into a 9x13 inch baking dish.
- 2In another bowl, whisk together 1 1/2 cups flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- 3Stir milk into the flour mixture until just combined; do not overmix. Drop spoonfuls of batter over the peach mixture.
- 4Bake for 40-45 minutes until the topping is golden brown and peaches are bubbling around the edges.
- 5Cool for 10 minutes before serving. Serve warm with vanilla ice cream if desired.
