Pecan Pancakes

Ingredients
- •1 cup all-purpose flour

- •2 teaspoons baking powder

- •1 cup buttermilk
- •1 egg
- •2 tablespoons melted butter
- •3/4 cup chopped pecans
- •2 tablespoons butter for cooking
- •to taste maple syrup
Directions
- 1Mix flour, sugar, baking powder, and salt in a large bowl.
- 2Whisk together buttermilk, egg, and melted butter in another bowl.
- 3Combine wet and dry ingredients until just blended, then fold in chopped pecans.
- 4Heat a buttered griddle or skillet over medium-high heat.
- 5Pour 1/4 cup batter per pancake onto the hot griddle and cook until bubbles form on top, about 2 minutes.
- 6Flip and cook the other side until golden brown, about 1-2 minutes.
- 7Serve warm with maple syrup.
