Pecan Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons melted butter
  • 3/4 cup chopped pecans
  • 2 tablespoons butter for cooking
  • to taste maple syrup

Directions

  1. 1Mix flour, sugar, baking powder, and salt in a large bowl.
  2. 2Whisk together buttermilk, egg, and melted butter in another bowl.
  3. 3Combine wet and dry ingredients until just blended, then fold in chopped pecans.
  4. 4Heat a buttered griddle or skillet over medium-high heat.
  5. 5Pour 1/4 cup batter per pancake onto the hot griddle and cook until bubbles form on top, about 2 minutes.
  6. 6Flip and cook the other side until golden brown, about 1-2 minutes.
  7. 7Serve warm with maple syrup.
