Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 3/4 cups chopped pecans
  • 1 tablespoon granulated sugar for rolling

Directions

  1. 1Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. 2Cream together softened butter and both sugars until light and fluffy, then beat in vanilla extract.
  3. 3In a separate bowl, whisk together flour and salt, then gently fold into the butter mixture until just combined.
  4. 4Fold in chopped pecans until evenly distributed throughout the dough.
  5. 5Roll dough into 1-inch balls, place on prepared baking sheets, and gently flatten slightly.
  6. 6Roll each ball in granulated sugar and bake for 12-15 minutes until edges are lightly golden.
