Peking Duck
Crispy-skinned roasted duck with a mahogany glaze, traditionally served with thin pancakes, scallions, and sweet bean sauce.

Ingredients
- •1 whole duck (4-5 lbs), cleaned and patted dry
- •3 tablespoons soy sauce
- •2 tablespoons honey
- •1 tablespoon rice vinegar
- •2 tablespoons hoisin sauce
- •1 tablespoon sesame oil
- •3 cloves garlic, minced
- •1 tablespoon grated ginger
- •2 scallions, chopped
- •1 cup water
- •to taste salt and white pepper
Directions
- 1Preheat oven to 400°F. Prick the duck skin all over with a fork to help render fat during cooking.
- 2Mix soy sauce, honey, rice vinegar, hoisin sauce, sesame oil, garlic, and ginger in a bowl to make the glaze.
- 3Place duck on a roasting rack in a pan with water at the bottom. Brush glaze over the duck and season with salt and pepper.
- 4Roast for 30 minutes at 400°F, then reduce heat to 325°F and continue roasting for 1.5 hours, basting with glaze every 20 minutes.
- 5Increase oven temperature to 425°F for the final 15 minutes to crisp the skin, basting one more time.
- 6Remove duck from oven and let rest for 10 minutes before carving into pieces.
- 7Serve with thin pancakes, sliced scallions, and sweet bean sauce on the side for wrapping.
