Penne all'Arrabbiata

Ingredients

  • 1 pound penne pasta
  • 2 cans (28 oz) crushed tomatoes
  • 6 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup Pecorino Romano cheese, grated

Directions

  1. 1Bring a large pot of salted water to a boil and cook penne according to package directions until al dente; reserve 1 cup of pasta water before draining.
  2. 2While pasta cooks, heat olive oil in a large skillet over medium heat and add minced garlic and red pepper flakes, stirring constantly for 1-2 minutes until fragrant.
  3. 3Add crushed tomatoes to the skillet, season with salt and black pepper, and simmer for 8-10 minutes, stirring occasionally.
  4. 4Add the drained penne to the sauce and toss well, adding reserved pasta water a little at a time to reach desired consistency.
  5. 5Remove from heat and stir in fresh parsley, then divide among serving bowls and top with grated Pecorino Romano cheese.
