Penne all'Arrabbiata
A classic Roman pasta with a fiery tomato and garlic sauce finished with a touch of heat and richness.

Ingredients
- •1 pound penne pasta
- •2 cans (28 oz) crushed tomatoes
- •6 cloves garlic, minced
- •1/2 teaspoon red pepper flakes
- •1/4 cup extra virgin olive oil
- •1/2 teaspoon salt
- •1/4 teaspoon black pepper
- •2 tablespoons fresh parsley, chopped
- •1/4 cup Pecorino Romano cheese, grated
Directions
- 1Bring a large pot of salted water to a boil and cook penne according to package directions until al dente; reserve 1 cup of pasta water before draining.
- 2While pasta cooks, heat olive oil in a large skillet over medium heat and add minced garlic and red pepper flakes, stirring constantly for 1-2 minutes until fragrant.
- 3Add crushed tomatoes to the skillet, season with salt and black pepper, and simmer for 8-10 minutes, stirring occasionally.
- 4Add the drained penne to the sauce and toss well, adding reserved pasta water a little at a time to reach desired consistency.
- 5Remove from heat and stir in fresh parsley, then divide among serving bowls and top with grated Pecorino Romano cheese.
