Ingredients

  • 3 cups penne pasta, leftover cooked
  • 1/3 cup mayonnaise
  • 1/2 cup kalamata olives, halved
  • 1/2 cup feta, crumbled
  • 1/2 cucumber, diced
  • 1/2 yellow bell pepper, diced
  • 1 tbsp red wine vinegar
  • 2 tbsp parsley, chopped

Directions

  1. 1Add leftover penne to a large mixing bowl.
  2. 2Stir in mayonnaise and red wine vinegar until pasta is evenly coated.
  3. 3Add olives, cucumber, and yellow bell pepper; toss to combine.
  4. 4Fold in crumbled feta gently so it stays chunky.
  5. 5Season with salt and pepper to taste.
  6. 6Garnish with chopped parsley and stir once more.
  7. 7Divide into 4 airtight containers and refrigerate until packing lunch.
  8. 8Serve cold straight from the container.
