Penne Pasta Salad with Feta, Olives & Mayo

Ingredients
- •3 cups penne pasta, leftover cooked
- •1/3 cup mayonnaise
- •1/2 cup kalamata olives, halved
- •1/2 cup feta, crumbled
- •1/2 cucumber, diced
- •1/2 yellow bell pepper, diced
- •1 tbsp red wine vinegar
- •2 tbsp parsley, chopped
Directions
- 1Add leftover penne to a large mixing bowl.
- 2Stir in mayonnaise and red wine vinegar until pasta is evenly coated.
- 3Add olives, cucumber, and yellow bell pepper; toss to combine.
- 4Fold in crumbled feta gently so it stays chunky.
- 5Season with salt and pepper to taste.
- 6Garnish with chopped parsley and stir once more.
- 7Divide into 4 airtight containers and refrigerate until packing lunch.
- 8Serve cold straight from the container.
