Peppermint Bark Cake

Ingredients
- •1¾ cups all-purpose flour
- •2 cups granulated sugar
- •¾ cup unsweetened cocoa powder
- •2 teaspoons baking soda
- •1 teaspoon salt
- •2 large eggs
- •1 cup hot water
- •½ cup vegetable oil
- •1 cup heavy cream
- •½ cup butter
- •½ teaspoon peppermint extract
- •½ cup crushed candy canes
Directions
- 1Preheat oven to 350°F and grease two 9-inch round cake pans. Whisk together flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
- 2Beat in eggs, hot water, oil, and vanilla until smooth. Divide batter evenly between pans and bake for 30-35 minutes until a toothpick comes out clean.
- 3Cool cakes in pans for 15 minutes, then turn out onto wire racks to cool completely.
- 4Beat butter and heavy cream together until light and fluffy, then add powdered sugar and peppermint extract, mixing until smooth.
- 5Place one cake layer on a serving plate, spread peppermint frosting on top, then add the second layer.
- 6Frost the entire cake with remaining peppermint frosting and top with crushed candy canes.
