Ingredients

  • 1¾ cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup hot water
  • ½ cup vegetable oil
  • 1 cup heavy cream
  • ½ cup butter
  • ½ teaspoon peppermint extract
  • ½ cup crushed candy canes

Directions

  1. 1Preheat oven to 350°F and grease two 9-inch round cake pans. Whisk together flour, sugar, cocoa powder, baking soda, and salt in a large bowl.
  2. 2Beat in eggs, hot water, oil, and vanilla until smooth. Divide batter evenly between pans and bake for 30-35 minutes until a toothpick comes out clean.
  3. 3Cool cakes in pans for 15 minutes, then turn out onto wire racks to cool completely.
  4. 4Beat butter and heavy cream together until light and fluffy, then add powdered sugar and peppermint extract, mixing until smooth.
  5. 5Place one cake layer on a serving plate, spread peppermint frosting on top, then add the second layer.
  6. 6Frost the entire cake with remaining peppermint frosting and top with crushed candy canes.
