Perkedel Jagung (Indonesian Corn Fritters)
Sweetcorn fritters bound with just enough batter, crushed slightly so the kernels release their milk.

Ingredients
- •300 g corn kernels
- •100 g all-purpose flour
- •1 egg
- •2 green onions, sliced
- •2 garlic cloves, minced
- •1 tsp ground coriander
- •500 ml neutral oil, for frying
Directions
- 1Crush about half the corn roughly with the back of a spoon so it releases its milk.
- 2Mix all the corn with the flour, egg, green onions, garlic and coriander, and season well.
- 3The mixture should be thick and barely hold together. Add a spoon of water only if it will not.
- 4Heat the oil to 170C.
- 5Fry spoonfuls for four minutes, turning once, until golden and set through.
- 6Drain and serve hot with rice or on their own.
💡 Crushing half the corn is what binds them. Leave every kernel whole and the fritters fall apart in the oil.
