Perkedel Jagung (Indonesian Corn Fritters)

Sweetcorn fritters bound with just enough batter, crushed slightly so the kernels release their milk.

Ingredients

  • 300 g corn kernels
  • 100 g all-purpose flour
  • 1 egg
  • 2 green onions, sliced
  • 2 garlic cloves, minced
  • 1 tsp ground coriander
  • 500 ml neutral oil, for frying

Directions

  1. 1Crush about half the corn roughly with the back of a spoon so it releases its milk.
  2. 2Mix all the corn with the flour, egg, green onions, garlic and coriander, and season well.
  3. 3The mixture should be thick and barely hold together. Add a spoon of water only if it will not.
  4. 4Heat the oil to 170C.
  5. 5Fry spoonfuls for four minutes, turning once, until golden and set through.
  6. 6Drain and serve hot with rice or on their own.

💡 Crushing half the corn is what binds them. Leave every kernel whole and the fritters fall apart in the oil.
