Pets de Sœur (Québécois Brown Sugar Pastry Pinwheels)
Québécois pastry pinwheels rolled with butter and brown sugar and baked until caramelized.

Ingredients
- •2 cups all-purpose flour
- •1/2 tsp salt
- •3/4 cup unsalted butter, cold and cubed
- •1/2 cup cold water
- •3 tbsp unsalted butter, softened
- •3/4 cup brown sugar
Directions
- 1Rub cold butter into flour and salt until coarse crumbs form.
- 2Add cold water and bring the pastry together gently.
- 3Roll the dough into a rectangle and spread it with softened butter.
- 4Scatter brown sugar evenly over the butter and roll the dough into a log.
- 5Slice into pinwheels and bake at 375°F (190°C) for 22–25 minutes.
- 6Cool for 10 minutes before serving.
