Peynirli Pide (Turkish Cheese Flatbread)

Boat-shaped flatbreads loaded with a melty mix of white cheese and herbs, baked in a screaming-hot oven until the crust is crisp and the filling is bubbling.

Ingredients

  • 1 lb store-bought pizza dough
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella
  • 2 large eggs
  • 3 tbsp fresh parsley, chopped
  • 1/2 tsp dried oregano
  • 1/4 tsp red chili flakes
  • 1 tbsp olive oil
  • 1/4 tsp black pepper
  • 1 tbsp unsalted butter

Directions

  1. 1Place a baking sheet or pizza stone in the oven and preheat to 500°F (260°C) for at least 15 minutes.
  2. 2Mix feta, mozzarella, parsley, oregano, chili flakes, and black pepper in a bowl until combined.
  3. 3Divide dough into 4 equal pieces; on a lightly floured surface roll each into a thin oval roughly 10 inches long.
  4. 4Mound a quarter of the cheese filling down the center of each oval, leaving a 1-inch border.
  5. 5Fold and pinch the long edges up and over to create a raised rim, then pinch the pointed ends to form a boat shape.
  6. 6Carefully slide pides onto the hot baking sheet; bake 8–10 minutes until the crust is golden and filling is bubbling.
  7. 7Crack one egg into the center of each pide for the last 3 minutes of baking if desired, then brush the crust with butter and serve immediately.

💡 Traditional pide uses a blend of unsalted white Turkish cheese (beyaz peynir) and kaşar; feta plus mozzarella is an excellent Canadian-supermarket substitute. Store-bought pizza dough is stocked refrigerated at most Canadian grocery chains.
