Philippine Chicken Adobo

Ingredients

  • 2 lbs chicken thighs and drumsticks, cut into pieces
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 6 cloves garlic, minced
  • 1 tbsp cooking oil
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup water
  • 2 bay leaves

Directions

  1. 1Heat oil in a large pot over medium-high heat and brown the chicken pieces on all sides, about 5-7 minutes total.
  2. 2Add minced garlic and cook for 1 minute until fragrant.
  3. 3Pour in soy sauce, vinegar, water, bay leaves, salt, and black pepper.
  4. 4Bring to a boil, then reduce heat and simmer covered for 25-30 minutes until chicken is tender and cooked through.
  5. 5Remove the lid and simmer for an additional 5 minutes to reduce the sauce slightly.
  6. 6Serve hot over steamed rice with extra sauce spooned over the chicken.
