Pho Bo (Beef Pho)

A fragrant Vietnamese beef noodle soup with tender meat, aromatic broth, and fresh herbs.

Ingredients

  • 2 lbs beef bones or beef chuck
  • 8 cups water
  • 1 onion, halved
  • 3 inch piece fresh ginger, halved lengthwise
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 stick cinnamon
  • 8 oz dried rice noodles
  • 8 oz beef sirloin, thinly sliced
  • 2 cups fresh basil, cilantro, and mint
  • 2 limes, cut into wedges

Directions

  1. 1Char the onion and ginger under a broiler for 3-4 minutes until blackened, then add to a pot with water and beef bones.
  2. 2Bring to a boil, then reduce heat and simmer for 90 minutes, skimming impurities from the surface.
  3. 3Add fish sauce, sugar, star anise, and cinnamon, and simmer for another 15 minutes. Strain the broth and season to taste.
  4. 4Cook rice noodles according to package directions, drain, and divide among serving bowls.
  5. 5Ladle hot broth into each bowl and top with sliced beef (it will cook from the heat of the broth).
  6. 6Serve with fresh herbs, lime wedges, and optional condiments like sriracha and hoisin sauce on the side.
