Pho Bo (Beef Pho)
A fragrant Vietnamese beef noodle soup with tender meat, aromatic broth, and fresh herbs.

Ingredients
- •2 lbs beef bones or beef chuck
- •8 cups water
- •1 onion, halved
- •3 inch piece fresh ginger, halved lengthwise
- •2 tbsp fish sauce
- •1 tbsp sugar
- •1 stick cinnamon
- •8 oz dried rice noodles
- •8 oz beef sirloin, thinly sliced
- •2 cups fresh basil, cilantro, and mint
- •2 limes, cut into wedges
Directions
- 1Char the onion and ginger under a broiler for 3-4 minutes until blackened, then add to a pot with water and beef bones.
- 2Bring to a boil, then reduce heat and simmer for 90 minutes, skimming impurities from the surface.
- 3Add fish sauce, sugar, star anise, and cinnamon, and simmer for another 15 minutes. Strain the broth and season to taste.
- 4Cook rice noodles according to package directions, drain, and divide among serving bowls.
- 5Ladle hot broth into each bowl and top with sliced beef (it will cook from the heat of the broth).
- 6Serve with fresh herbs, lime wedges, and optional condiments like sriracha and hoisin sauce on the side.
