Pholourie (Trinidadian Split Pea Fritters)
Trinidadian split-pea fritters seasoned with cumin, garlic, and chile and fried until light and crisp.

Ingredients
- •1 cup yellow split peas, soaked 4 hours
- •1 cup all-purpose flour
- •2 cloves garlic, minced
- •1 tsp ground cumin
- •1/2 tsp ground turmeric
- •1 fresh chili, minced
- •1 tsp salt
- •1 tsp baking powder
- •3/4 cup water
- •5 cups vegetable oil for frying
Directions
- 1Drain the soaked split peas and blend them with garlic, cumin, turmeric, chili, and salt.
- 2Mix the pea paste with flour, baking powder, and enough water for a thick dropping batter.
- 3Rest the batter for 20 minutes.
- 4Heat vegetable oil to 350°F (175°C).
- 5Drop spoonfuls of batter into the oil and fry for 3–4 minutes until golden.
- 6Drain and serve hot.
💡 The batter should fall slowly from a spoon; thin batter absorbs oil and produces flat pholourie.
