Ingredients

  • 1 cup yellow split peas, soaked 4 hours
  • 1 cup all-purpose flour
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp ground turmeric
  • 1 fresh chili, minced
  • 1 tsp salt
  • 1 tsp baking powder
  • 3/4 cup water
  • 5 cups vegetable oil for frying

Directions

  1. 1Drain the soaked split peas and blend them with garlic, cumin, turmeric, chili, and salt.
  2. 2Mix the pea paste with flour, baking powder, and enough water for a thick dropping batter.
  3. 3Rest the batter for 20 minutes.
  4. 4Heat vegetable oil to 350°F (175°C).
  5. 5Drop spoonfuls of batter into the oil and fry for 3–4 minutes until golden.
  6. 6Drain and serve hot.

💡 The batter should fall slowly from a spoon; thin batter absorbs oil and produces flat pholourie.
