Pierogi
Soft potato and cheese-filled dumplings served with caramelized onions and sour cream.

Ingredients
- •2 cups all-purpose flour
- •1 egg
- •1/2 cup sour cream
- •1/2 teaspoon salt
- •2 cups mashed potatoes
- •1 cup sharp cheddar cheese, shredded
- •2 tablespoons butter
- •2 onions, sliced
Directions
- 1Mix flour, egg, 1/4 cup sour cream, and salt to form a soft dough. Knead for 5 minutes and let rest 20 minutes.
- 2Combine mashed potatoes with shredded cheese to make the filling.
- 3Roll dough thin on a floured surface and cut 3-inch circles. Place 1 tablespoon filling on each circle, fold in half, and seal edges.
- 4Bring a large pot of salted water to boil and cook pierogi until they float, then 2 minutes more.
- 5Melt butter in a skillet and caramelize the sliced onions until golden brown.
- 6Serve pierogi topped with caramelized onions and a dollop of sour cream.
