Pierogi

Soft potato and cheese-filled dumplings served with caramelized onions and sour cream.

Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 2 cups mashed potatoes
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons butter
  • 2 onions, sliced

Directions

  1. 1Mix flour, egg, 1/4 cup sour cream, and salt to form a soft dough. Knead for 5 minutes and let rest 20 minutes.
  2. 2Combine mashed potatoes with shredded cheese to make the filling.
  3. 3Roll dough thin on a floured surface and cut 3-inch circles. Place 1 tablespoon filling on each circle, fold in half, and seal edges.
  4. 4Bring a large pot of salted water to boil and cook pierogi until they float, then 2 minutes more.
  5. 5Melt butter in a skillet and caramelize the sliced onions until golden brown.
  6. 6Serve pierogi topped with caramelized onions and a dollop of sour cream.
