Pikliz-Topped Haitian Patties

Flaky Haitian savoury patties filled with spiced beef and served with sharp, crunchy pikliz.

Ingredients

  • 1 package puff pastry, thawed
  • 1 lb ground beef
  • 1/2 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 egg, beaten
  • 1 cup pikliz

Directions

  1. 1Cook ground beef and onion for 6 minutes, then add garlic, thyme, tomato paste, salt, and black pepper.
  2. 2Cool the beef filling for 10 minutes.
  3. 3Cut puff pastry into eight rectangles and place filling on one side of each.
  4. 4Fold, seal, and crimp the pastry edges with a fork.
  5. 5Brush with beaten egg and bake at 400°F (200°C) for 18–20 minutes.
  6. 6Serve the hot patties with pikliz spooned over or alongside.

💡 Serve the pikliz at the last moment so its vinegar does not soften the pastry.
