Pikliz-Topped Haitian Patties
Flaky Haitian savoury patties filled with spiced beef and served with sharp, crunchy pikliz.

Ingredients
- •1 package puff pastry, thawed
- •1 lb ground beef
- •1/2 medium yellow onion, finely diced
- •2 cloves garlic, minced
- •1 tsp fresh thyme leaves
- •1 tbsp tomato paste
- •1 tsp salt
- •1/4 tsp black pepper
- •1 egg, beaten
- •1 cup pikliz
Directions
- 1Cook ground beef and onion for 6 minutes, then add garlic, thyme, tomato paste, salt, and black pepper.
- 2Cool the beef filling for 10 minutes.
- 3Cut puff pastry into eight rectangles and place filling on one side of each.
- 4Fold, seal, and crimp the pastry edges with a fork.
- 5Brush with beaten egg and bake at 400°F (200°C) for 18–20 minutes.
- 6Serve the hot patties with pikliz spooned over or alongside.
💡 Serve the pikliz at the last moment so its vinegar does not soften the pastry.
