Pineapple Upside-Down Cake

- •1 can (20 oz) pineapple slices in juice

- •1 3/4 cups all-purpose flour
- •2 teaspoons baking powder
- •1/4 teaspoon salt
- •1/2 cup butter, softened
- •1 cup granulated sugar
- •1 large egg
- •1/2 cup pineapple juice
- •1/2 teaspoon vanilla extract
Directions
- 1Preheat oven to 350°F. Melt 1/3 cup butter in a 9-inch round cake pan, then sprinkle brown sugar evenly over the butter.
- 2Drain pineapple slices, reserving 1/2 cup juice. Arrange pineapple rings in the pan and place a cherry in the center of each ring.
- 3Mix flour, baking powder, and salt in a bowl. In another bowl, cream 1/2 cup softened butter and granulated sugar until fluffy, then beat in the egg, reserved pineapple juice, and vanilla.
- 4Fold the dry ingredients into the wet ingredients until just combined, then pour the batter over the pineapple layer.
- 5Bake for 35-40 minutes until a toothpick inserted in the cake comes out clean.
- 6Cool for 5 minutes, then run a knife around the edges and invert onto a serving plate while still warm.
