Ingredients

  • 1/3 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices in juice
  • 8-10 pieces maraschino cherries
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1/2 cup pineapple juice
  • 1/2 teaspoon vanilla extract

Directions

  1. 1Preheat oven to 350°F. Melt 1/3 cup butter in a 9-inch round cake pan, then sprinkle brown sugar evenly over the butter.
  2. 2Drain pineapple slices, reserving 1/2 cup juice. Arrange pineapple rings in the pan and place a cherry in the center of each ring.
  3. 3Mix flour, baking powder, and salt in a bowl. In another bowl, cream 1/2 cup softened butter and granulated sugar until fluffy, then beat in the egg, reserved pineapple juice, and vanilla.
  4. 4Fold the dry ingredients into the wet ingredients until just combined, then pour the batter over the pineapple layer.
  5. 5Bake for 35-40 minutes until a toothpick inserted in the cake comes out clean.
  6. 6Cool for 5 minutes, then run a knife around the edges and invert onto a serving plate while still warm.
