Pirão (Brazilian Cassava Broth Side)

Cassava flour whisked into hot fish stock until it thickens into a smooth savoury porridge for spooning over rice.

Ingredients

  • 500 ml fish stock
  • 120 g cassava flour
  • 1 tbsp butter
  • 2 tbsp cilantro, chopped

Directions

  1. 1Bring the fish stock to a gentle simmer in a wide pan.
  2. 2Take it off the heat so it stops bubbling.
  3. 3Pour the cassava flour in a thin steady stream with one hand while whisking hard with the other.
  4. 4Return to low heat and stir constantly for five minutes as it thickens.
  5. 5Beat in the butter and season with salt.
  6. 6Stir through the cilantro and serve at once, while it still pours.

💡 Off the heat when the flour goes in, and never stop whisking. Cassava flour lumps instantly and the lumps do not come out.
