Pirão (Brazilian Cassava Broth Side)
Cassava flour whisked into hot fish stock until it thickens into a smooth savoury porridge for spooning over rice.

Ingredients
- •500 ml fish stock
- •120 g cassava flour
- •1 tbsp butter
- •2 tbsp cilantro, chopped
Directions
- 1Bring the fish stock to a gentle simmer in a wide pan.
- 2Take it off the heat so it stops bubbling.
- 3Pour the cassava flour in a thin steady stream with one hand while whisking hard with the other.
- 4Return to low heat and stir constantly for five minutes as it thickens.
- 5Beat in the butter and season with salt.
- 6Stir through the cilantro and serve at once, while it still pours.
💡 Off the heat when the flour goes in, and never stop whisking. Cassava flour lumps instantly and the lumps do not come out.
