Ingredients
- •3 cups cooked cannellini beans, drained and cooled
- •1/2 small red onion, thinly sliced
- •1/2 cup flat-leaf parsley, roughly chopped
- •1 large tomato, cut into wedges
- •2 tbsp lemon juice
- •3 tbsp extra-virgin olive oil
- •1 tsp ground sumac
- •1/2 tsp kosher salt
- •1/4 tsp black pepper
Directions
- 1Rinse the sliced red onion under cold water for 20 seconds and squeeze it dry to soften its raw sharpness.
- 2Whisk lemon juice, olive oil, sumac, salt, and black pepper in a serving bowl.
- 3Add the cannellini beans, red onion, parsley, and tomato and fold gently so the beans stay intact.
- 4Rest the dressed cannellini beans and onion 10 minutes at room temperature before serving.
💡 Use fully cooled beans; warm beans absorb the dressing too aggressively and can turn soft enough to break during tossing.
