Ingredients

  • 1 1/2 lb fresh spinach
  • 1 cup walnuts
  • 1/2 cup fresh cilantro, chopped
  • 2 cloves garlic
  • 2 tbsp red wine vinegar
  • 1 tsp ground coriander
  • 1/2 tsp blue fenugreek
  • 3/4 tsp salt
  • 1/3 cup pomegranate seeds

Directions

  1. 1Blanch the spinach in boiling water for 2 minutes, then cool it quickly under cold water.
  2. 2Squeeze the spinach very dry and chop it roughly.
  3. 3Pulse walnuts, cilantro, garlic, vinegar, coriander, blue fenugreek, and salt in a food processor.
  4. 4Add the spinach and pulse until the mixture is finely chopped but not completely smooth.
  5. 5Shape the mixture into small mounds or a shallow serving dish.
  6. 6Top with pomegranate seeds and chill briefly before serving.

💡 Squeeze the spinach firmly after blanching; excess water makes pkhali loose and mutes the walnut flavour.
