Pkhali (Georgian Spinach Walnut Spread)
Georgian spinach and walnut spread seasoned with cilantro, garlic, vinegar, coriander, and blue fenugreek, shaped into small portions for serving.

Ingredients
- •1 1/2 lb fresh spinach
- •1 cup walnuts
- •1/2 cup fresh cilantro, chopped
- •2 cloves garlic
- •2 tbsp red wine vinegar
- •1 tsp ground coriander
- •1/2 tsp blue fenugreek
- •3/4 tsp salt
- •1/3 cup pomegranate seeds
Directions
- 1Blanch the spinach in boiling water for 2 minutes, then cool it quickly under cold water.
- 2Squeeze the spinach very dry and chop it roughly.
- 3Pulse walnuts, cilantro, garlic, vinegar, coriander, blue fenugreek, and salt in a food processor.
- 4Add the spinach and pulse until the mixture is finely chopped but not completely smooth.
- 5Shape the mixture into small mounds or a shallow serving dish.
- 6Top with pomegranate seeds and chill briefly before serving.
💡 Squeeze the spinach firmly after blanching; excess water makes pkhali loose and mutes the walnut flavour.
