Ployes (Acadian Buckwheat Pancakes)
Thin Acadian buckwheat pancakes made without eggs or dairy, cooked on one side until the top sets into a field of tiny holes.

Ingredients

- •1/2 cup all-purpose flour
- •2 tsp baking powder
- •1 tsp salt
- •2 1/4 cups warm water
- •1 tbsp, for the pan vegetable oil
Directions
- 1Whisk buckwheat flour, all-purpose flour, baking powder, and salt together in a large bowl.
- 2Pour in warm water gradually, whisking until the batter is smooth, thin, and pourable.
- 3Let the batter rest for 15 minutes so the flours hydrate and small bubbles begin to form.
- 4Heat a lightly oiled skillet over medium heat and pour in enough batter for a thin 7-inch round.
- 5Cook without flipping until the surface is dry and covered with small holes, about 2 minutes.
- 6Stack the ployes under a clean towel and repeat with the remaining batter.
