A light and savory Indian breakfast of flattened rice tossed with potatoes, peanuts, and aromatic spices.

Ingredients

  • 2 cups flattened rice (poha)
  • 1 medium potato, diced
  • 1/2 cup roasted peanuts
  • 1/4 cup diced onion
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • 2 tablespoons fresh cilantro, chopped
  • 1 green chili, sliced
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice

Directions

  1. 1Rinse the flattened rice under water for 30 seconds and drain completely.
  2. 2Heat oil in a large pan and add mustard seeds; let them crackle for 30 seconds.
  3. 3Add diced potatoes and cook for 4-5 minutes until softened.
  4. 4Add onions and green chili, cook for 1 minute until fragrant.
  5. 5Add turmeric powder, red chili powder, and salt; mix well.
  6. 6Add the rinsed poha and peanuts, toss gently for 2-3 minutes.
  7. 7Remove from heat, add cilantro and lemon juice, and mix gently.
  8. 8Serve immediately while warm.
