Poireaux Vinaigrette (French Leeks with Mustard Dressing)

Ingredients
- •6 leeks, white and light-green parts
- •1 tbsp Dijon mustard
- •2 tbsp red wine vinegar
- •1/4 cup olive oil
- •2 hard-boiled eggs, chopped
- •2 tbsp fresh parsley, chopped
- •3/4 tsp salt
- •1/4 tsp black pepper
Directions
- 1Split the leeks lengthwise and rinse thoroughly between the layers.
- 2Simmer the leeks in salted water for 12–15 minutes until tender.
- 3Drain well and cool for 5 minutes.
- 4Whisk mustard, vinegar, olive oil, salt, and black pepper.
- 5Arrange leeks on a platter and spoon over the vinaigrette.
- 6Finish with chopped egg and parsley.
