Ingredients

  • 6 leeks, white and light-green parts
  • 1 tbsp Dijon mustard
  • 2 tbsp red wine vinegar
  • 1/4 cup olive oil
  • 2 hard-boiled eggs, chopped
  • 2 tbsp fresh parsley, chopped
  • 3/4 tsp salt
  • 1/4 tsp black pepper

Directions

  1. 1Split the leeks lengthwise and rinse thoroughly between the layers.
  2. 2Simmer the leeks in salted water for 12–15 minutes until tender.
  3. 3Drain well and cool for 5 minutes.
  4. 4Whisk mustard, vinegar, olive oil, salt, and black pepper.
  5. 5Arrange leeks on a platter and spoon over the vinaigrette.
  6. 6Finish with chopped egg and parsley.
