Polish Naleśniki with Savoury Cheese and Spinach

Ingredients
- •1 1/2 cups all-purpose flour
- •2 cups whole milk
- •3 eggs
- •1 tsp salt
- •2 tbsp vegetable oil
- •2 cups cottage cheese
- •4 cups spinach, chopped
- •2 tbsp fresh dill, chopped
- •1/4 tsp black pepper
Directions
- 1Whisk flour, milk, eggs, half the salt, and 1 tablespoon oil into a thin batter.
- 2Cook thin crepes in a lightly oiled skillet for about 1 minute per side.
- 3Cook spinach in the skillet for 2 minutes until wilted, then squeeze it dry.
- 4Mix spinach with cottage cheese, dill, remaining salt, and black pepper.
- 5Spread filling over each crepe and fold into neat rectangles.
- 6Warm briefly in the skillet or cool for packing.
