Polish Naleśniki with Savoury Cheese and Spinach

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 cups whole milk
  • 3 eggs
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 2 cups cottage cheese
  • 4 cups spinach, chopped
  • 2 tbsp fresh dill, chopped
  • 1/4 tsp black pepper

Directions

  1. 1Whisk flour, milk, eggs, half the salt, and 1 tablespoon oil into a thin batter.
  2. 2Cook thin crepes in a lightly oiled skillet for about 1 minute per side.
  3. 3Cook spinach in the skillet for 2 minutes until wilted, then squeeze it dry.
  4. 4Mix spinach with cottage cheese, dill, remaining salt, and black pepper.
  5. 5Spread filling over each crepe and fold into neat rectangles.
  6. 6Warm briefly in the skillet or cool for packing.
