Pommes de Terre Persillées
Simple French parsley potatoes tossed warm with butter, garlic, and lemon for an easy side that also reheats well in meal-prep lunches.

Ingredients
- •1 1/2 lb baby potatoes, halved if large
- •2 tbsp butter
- •1 clove garlic, finely minced
- •1/4 cup fresh parsley, finely chopped
- •1 tbsp fresh lemon juice
- •3/4 tsp salt
- •1/4 tsp black pepper
Directions
- 1Place potatoes in a saucepan, cover with cold water, add half the salt, and bring to a boil.
- 2Reduce to a steady simmer and cook 12–15 minutes until a knife slides easily into the centers.
- 3Drain well, return the potatoes to the warm pan, and let surface moisture steam off for 1 minute.
- 4Add butter and garlic and toss over low heat for 1 minute until the butter coats the potatoes and the garlic smells fragrant.
- 5Remove from heat, fold in parsley, lemon juice, remaining salt, and black pepper, then serve warm.
💡 Let the drained potatoes steam dry before adding butter; a wet surface dilutes the coating and keeps the parsley from clinging.
