Pork and Green Bean Sinigang
A soul-warming sour tamarind broth loaded with tender pork belly, green beans, and fresh tomatoes — this is Filipino comfort food at its most honest. Tart, savoury, and deeply satisfying, it's the soup every homesick Filipino craves.

Ingredients
- •1.5 lb pork belly or pork shoulder, cut into 2-inch pieces
- •1 sinigang sa sampalok tamarind soup mix packet (40 g)
- •8 cups water
- •2 Roma tomatoes, quartered
- •1 yellow onion, cut into wedges
- •2 cups green beans, trimmed
- •2 cups fresh spinach or bok choy
- •2 tbsp fish sauce
- •to taste salt and pepper
Directions
- 1Place pork, onion, and tomatoes in a large pot with 8 cups of water; bring to a boil over high heat.
- 2Skim off any grey foam that rises to the surface, then reduce heat to medium.
- 3Simmer uncovered for 25–30 minutes until pork is tender.
- 4Stir in the tamarind soup mix packet until fully dissolved.
- 5Add fish sauce and taste; adjust saltiness or sourness with more fish sauce or a squeeze of extra packet.
- 6Add green beans and simmer for 4 minutes until just tender.
- 7Stir in spinach or bok choy and cook for 1 minute until wilted.
- 8Ladle into bowls and serve immediately with steamed rice.
💡 Knorr Sinigang sa Sampalok mix is sold at Asian grocery stores and many Canadian supermarkets (T&T, H-Mart, Seafood City); if unavailable, use 3 tbsp tamarind paste dissolved in 1 cup of the hot broth. Fish sauce can be replaced with soy sauce for a milder flavour.
