Pork Meatballs in Sweet and Sour Sauce

Ingredients
- •1 lb ground pork
- •1/2 cup breadcrumbs
- •1 egg
- •3 tbsp soy sauce
- •1/2 cup pineapple juice
- •1/4 cup rice vinegar
- •3 tbsp brown sugar
- •1 cup pineapple chunks
- •1 red bell pepper, cubed
- •2 tbsp cornstarch
- •2 cloves garlic, minced
- •2 tbsp vegetable oil
Directions
- 1Mix ground pork, breadcrumbs, egg, 1 tbsp soy sauce, and minced garlic in a bowl. Roll into 1-inch meatballs.
- 2Heat oil in a large skillet over medium-high heat and brown meatballs for 8-10 minutes until cooked through. Remove and set aside.
- 3In a small bowl, whisk together pineapple juice, rice vinegar, brown sugar, remaining soy sauce, and cornstarch.
- 4Pour the sauce into the same skillet and stir over medium heat until thickened, about 2-3 minutes.
- 5Add pineapple chunks and bell pepper to the sauce and cook for 2 minutes.
- 6Return meatballs to the skillet and gently toss to coat evenly with sauce. Simmer for 2-3 minutes.
- 7Serve hot over steamed rice.
