Ingredients

  • 1 lb ground pork
  • 1/2 cup breadcrumbs
  • 1 egg
  • 3 tbsp soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup rice vinegar
  • 3 tbsp brown sugar
  • 1 cup pineapple chunks
  • 1 red bell pepper, cubed
  • 2 tbsp cornstarch
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil

Directions

  1. 1Mix ground pork, breadcrumbs, egg, 1 tbsp soy sauce, and minced garlic in a bowl. Roll into 1-inch meatballs.
  2. 2Heat oil in a large skillet over medium-high heat and brown meatballs for 8-10 minutes until cooked through. Remove and set aside.
  3. 3In a small bowl, whisk together pineapple juice, rice vinegar, brown sugar, remaining soy sauce, and cornstarch.
  4. 4Pour the sauce into the same skillet and stir over medium heat until thickened, about 2-3 minutes.
  5. 5Add pineapple chunks and bell pepper to the sauce and cook for 2 minutes.
  6. 6Return meatballs to the skillet and gently toss to coat evenly with sauce. Simmer for 2-3 minutes.
  7. 7Serve hot over steamed rice.
