Pork Ribs and Daikon Soup

Ingredients

  • 1.5 lbs pork spare ribs, cut into chunks
  • 1 lb daikon radish, peeled and cubed
  • 8 cups water or chicken broth
  • 3 slices fresh ginger
  • 4 pieces dried red dates (jujubes)
  • 6 pieces goji berries
  • 2 dried shiitake mushrooms
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 2 stalks green onion

Directions

  1. 1Blanch pork ribs in boiling water for 2 minutes, then rinse under cold water to remove impurities.
  2. 2In a large pot, bring 8 cups of water to boil and add cleaned pork ribs with ginger slices.
  3. 3Add daikon radish cubes, dried red dates, and shiitake mushrooms to the pot.
  4. 4Reduce heat to medium-low and simmer for 60 minutes until ribs are tender and daikon is soft.
  5. 5Add goji berries and season with salt and white pepper to taste.
  6. 6Simmer for another 5 minutes, then serve hot garnished with chopped green onion.
