Pork Ribs and Daikon Soup

Ingredients
- •1.5 lbs pork spare ribs, cut into chunks
- •1 lb daikon radish, peeled and cubed
- •8 cups water or chicken broth
- •3 slices fresh ginger
- •4 pieces dried red dates (jujubes)
- •6 pieces goji berries
- •2 dried shiitake mushrooms
- •1 teaspoon salt
- •1/2 teaspoon white pepper
- •2 stalks green onion
Directions
- 1Blanch pork ribs in boiling water for 2 minutes, then rinse under cold water to remove impurities.
- 2In a large pot, bring 8 cups of water to boil and add cleaned pork ribs with ginger slices.
- 3Add daikon radish cubes, dried red dates, and shiitake mushrooms to the pot.
- 4Reduce heat to medium-low and simmer for 60 minutes until ribs are tender and daikon is soft.
- 5Add goji berries and season with salt and white pepper to taste.
- 6Simmer for another 5 minutes, then serve hot garnished with chopped green onion.
