Pork Scaloppini

Tender, thin-pounded pork cutlets pan-seared golden and finished with a bright lemon and white wine sauce.

Ingredients

  • 1.5 lbs pork tenderloin, sliced into 1/2-inch thick cutlets
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp olive oil
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 2 tbsp fresh parsley, chopped

Directions

  1. 1Place pork cutlets between plastic wrap and pound to 1/4-inch thickness using a meat mallet.
  2. 2Mix flour, salt, and pepper in a shallow dish and dredge each pork cutlet, shaking off excess.
  3. 3Heat olive oil in a large skillet over medium-high heat and sear pork for 2-3 minutes per side until golden; remove and set aside.
  4. 4In the same skillet, sauté garlic for 30 seconds, then add white wine and chicken broth, scraping up browned bits.
  5. 5Return pork to skillet, add lemon juice, and simmer for 3-4 minutes until sauce reduces slightly.
  6. 6Remove from heat, stir in butter until melted, and garnish with fresh parsley before serving.
