Pork Sinigang (Sour Tamarind Soup)

A warming, sour broth made with pork ribs, fresh vegetables, and tamarind that fills the whole kitchen with an irresistible smell. This beloved Filipino soup is hearty enough to be a complete meal on its own.

Ingredients

  • 1.5 lb pork back ribs, cut into 2-inch pieces
  • 1 packet (40g) tamarind soup base mix (e.g. Knorr Sinigang mix)
  • 8 cups water
  • 1 medium yellow onion, quartered
  • 2 medium tomatoes, quartered
  • 2 tbsp fish sauce
  • 3 cups baby bok choy or spinach
  • 1 cup long green beans (or regular green beans), cut in 2-inch pieces
  • 1 medium zucchini, sliced into half-moons
  • 4 cups cooked steamed white rice, for serving

Directions

  1. 1Place pork ribs, onion, and tomatoes in a large pot; cover with 8 cups water and bring to a boil over high heat.
  2. 2Skim off any grey foam that rises to the surface during the first 5 minutes.
  3. 3Reduce heat to medium, cover, and simmer 30 minutes until pork is tender.
  4. 4Stir in the tamarind soup mix and fish sauce; taste and adjust saltiness.
  5. 5Add green beans and zucchini and cook 5 minutes until just tender.
  6. 6Add bok choy or spinach, stir, and cook 2 more minutes until wilted.
  7. 7Ladle into deep bowls and serve with steamed rice on the side for dipping.

💡 Knorr Sinigang sa Sampaloc mix is sold at most Asian grocery stores and some larger Walmart or T&T locations in Canada; if unavailable, dissolve 3 tbsp of tamarind paste (found in the international aisle) in 1/2 cup warm water and add to the broth. Fish sauce can be swapped with extra soy sauce.
