Pork Spareribs with Black Bean Sauce

Tender, fall-off-the-bone pork spareribs glazed in a savory umami-rich black bean sauce with garlic and ginger.

Ingredients

  • 2 lbs pork spareribs, cut into individual ribs
  • 3 tbsp fermented black beans, rinsed and chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sugar
  • 1 cup chicken broth
  • 2 tbsp vegetable oil
  • 1 tsp cornstarch mixed with 2 tbsp water
  • 2 green onions, sliced
  • 1 tsp sesame oil

Directions

  1. 1Heat oil in a large wok or pot over high heat. Add spareribs and sear for 3-4 minutes until browned on all sides. Remove and set aside.
  2. 2In the same pot, add minced garlic and ginger, stirring for 30 seconds until fragrant.
  3. 3Add the chopped fermented black beans and stir for 1 minute.
  4. 4Return spareribs to the pot and add soy sauce, oyster sauce, sugar, and chicken broth. Bring to a boil.
  5. 5Reduce heat to medium-low, cover, and simmer for 25-30 minutes until the ribs are tender.
  6. 6Stir the cornstarch slurry and add it to the pot, stirring constantly for 2-3 minutes until the sauce thickens.
  7. 7Drizzle with sesame oil and garnish with green onions. Serve hot over rice.
