Pork Tocino (Sweet Cured Pork Breakfast)
Thin-sliced pork marinated in a sweet, garlicky cure and pan-fried until caramelized and slightly charred at the edges — the quintessential Filipino breakfast served alongside garlic fried rice and a fried egg. It's sweet, savory, and impossibly satisfying.

Ingredients
- •1.5 lb pork shoulder or pork butt, sliced 1/4-inch thin
- •3 tbsp granulated sugar
- •2 tbsp brown sugar
- •2 tbsp soy sauce
- •4 garlic cloves, minced
- •1 tsp salt
- •1/2 tsp ground black pepper
- •1 tbsp neutral oil
- •1/4 cup water
- •4 portions cooked garlic fried rice and fried eggs, for serving
Directions
- 1Combine both sugars, soy sauce, garlic, salt, and pepper in a bowl; add sliced pork and mix well to coat every piece.
- 2Marinate at least 30 minutes at room temperature or overnight in the fridge (overnight gives much deeper flavor).
- 3Heat oil in a non-stick pan over medium heat; add pork slices in a single layer and pour in the water.
- 4Cook 4–5 minutes, stirring occasionally, until the water evaporates completely.
- 5Continue cooking another 3–4 minutes, flipping the slices, until the pork caramelizes and develops lightly charred, sticky edges.
- 6Serve immediately alongside garlic fried rice and fried eggs.
💡 Ask your butcher to slice the pork thin, or partially freeze the shoulder for 20 minutes at home to make slicing easier yourself. Some Asian grocery stores carry pre-sliced tocino in the frozen section for a shortcut. Watch the heat carefully once the water evaporates — the sugar burns quickly.
