Pork Tocino with Garlic Fried Rice

Sweet, sticky cured pork slices pan-fried until caramelized and served alongside crispy garlic fried rice and a fried egg — this is the beloved Filipino breakfast plate known as 'tosilog.' It's simple, fast, and tastes like a weekend morning at home.

Ingredients

  • 1 lb thinly sliced pork shoulder or pork belly
  • 3 tbsp white sugar
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp annatto powder or sweet paprika
  • 1/4 tsp salt
  • 1/4 cup water
  • 3 cups day-old cooked white rice
  • 5 garlic cloves, minced
  • 3 tbsp neutral oil
  • 4 eggs
  • 2 green onion, sliced (optional)

Directions

  1. 1Combine sugar, soy sauce, garlic powder, annatto powder, and salt in a bowl; add pork slices and toss to coat.
  2. 2Marinate at room temperature for 15 minutes (or overnight in the fridge for best flavour).
  3. 3Meanwhile, heat 2 tbsp oil in a large skillet over medium heat; add minced garlic and fry, stirring, for 2 minutes until golden and fragrant.
  4. 4Add day-old rice and stir-fry for 4–5 minutes, breaking up clumps, until heated through and lightly toasted; season with a pinch of salt and set aside.
  5. 5In the same pan, add the marinated pork with 1/4 cup water over medium heat; cook for 3 minutes until water evaporates.
  6. 6Continue cooking pork for 3–4 minutes more, turning once, until caramelized and slightly charred at the edges.
  7. 7In a separate small pan, fry eggs sunny-side up in remaining oil.
  8. 8Plate garlic rice, pork tocino, and a fried egg together; top with green onion.

💡 Annatto powder (atsuete) gives the pork its signature red-orange colour and a mild earthy flavour — find it at Latin American or Asian grocery stores. Sweet paprika is a perfect substitute at any Canadian supermarket. Use cold leftover rice for the best fried rice texture.
