Portobello Mushroom Burger
Meaty marinated portobello caps grilled until tender and smoky, layered with roasted red pepper, peppery arugula, and herbed goat cheese on a toasted bun. A vegetarian burger that carnivores actually crave.

Ingredients
- •4 large portobello mushroom caps, stems removed
- •3 tbsp olive oil
- •2 tbsp balsamic vinegar
- •1 tbsp soy sauce
- •2 cloves garlic, minced
- •1/2 tsp dried thyme
- •1/2 tsp black pepper
- •1/2 cup roasted red peppers from a jar, drained
- •100 g soft goat cheese (chèvre)
- •2 tbsp fresh chives, finely chopped
- •1 cup arugula
- •4 ciabatta buns or burger buns
- •2 tbsp mayonnaise
Directions
- 1Whisk together olive oil, balsamic vinegar, soy sauce, garlic, thyme, and pepper in a shallow dish.
- 2Add portobello caps gill-side up and spoon marinade over them; let sit 10 minutes.
- 3Preheat grill or grill pan to medium-high heat and lightly oil the grates.
- 4Grill mushrooms gill-side down 4–5 minutes, flip, and grill another 4–5 minutes until tender and juicy.
- 5Meanwhile, mash goat cheese with chives until smooth and spreadable.
- 6Toast buns cut-side down on the grill for 1–2 minutes.
- 7Spread mayonnaise on bottom bun and herbed goat cheese on top bun, then layer arugula, mushroom cap, and roasted red pepper; press together and serve.
💡 If goat cheese isn't available, cream cheese mixed with a pinch of garlic powder and herbs works well. Pat mushrooms dry before marinating if they seem very wet — excess moisture causes steaming rather than grilling.
