Portuguese Bifana (Pork Sandwich)

Portuguese sandwich of thin pork cutlets cooked in a garlicky wine-paprika sauce and tucked into crusty rolls.

Ingredients

  • 1 1/2 lb pork loin, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 2 tbsp white vinegar
  • 1 tsp paprika
  • 1 bay leaf
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 4 crusty sandwich rolls
  • 2 tbsp yellow mustard

Directions

  1. 1Marinate pork with garlic, wine, vinegar, paprika, bay leaf, salt, and black pepper for 15 minutes.
  2. 2Heat olive oil and sear the pork in batches for 2 minutes per side.
  3. 3Pour the marinade into the skillet and simmer for 5 minutes.
  4. 4Return all pork to the sauce and toss until glossy.
  5. 5Split the rolls and spread lightly with mustard.
  6. 6Fill each roll generously with hot pork and spoon over a little pan sauce.
