Portuguese Bifana (Pork Sandwich)
Portuguese sandwich of thin pork cutlets cooked in a garlicky wine-paprika sauce and tucked into crusty rolls.

Ingredients
- •1 1/2 lb pork loin, thinly sliced
- •4 cloves garlic, minced
- •1/2 cup dry white wine
- •2 tbsp white vinegar
- •1 tsp paprika
- •1 bay leaf
- •2 tbsp olive oil
- •1 tsp salt
- •1/4 tsp black pepper
- •4 crusty sandwich rolls
- •2 tbsp yellow mustard
Directions
- 1Marinate pork with garlic, wine, vinegar, paprika, bay leaf, salt, and black pepper for 15 minutes.
- 2Heat olive oil and sear the pork in batches for 2 minutes per side.
- 3Pour the marinade into the skillet and simmer for 5 minutes.
- 4Return all pork to the sauce and toss until glossy.
- 5Split the rolls and spread lightly with mustard.
- 6Fill each roll generously with hot pork and spoon over a little pan sauce.
