Portuguese Custard Tart (Pastel de Nata)

Ingredients

  • 1 pound thawed puff pastry sheets
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 4 egg yolks
  • 1/4 cup cornstarch
  • 1/2 cup granulated sugar
  • 1 pinch salt
  • 2 tablespoons ground cinnamon
  • 1 tablespoon powdered sugar

Directions

  1. 1Heat milk and cream with vanilla bean or extract until steaming; let cool slightly.
  2. 2Whisk egg yolks with sugar, cornstarch, and salt until pale, then slowly add warm milk mixture while stirring constantly.
  3. 3Cook custard over medium heat, stirring frequently, until thickened (about 5 minutes); cool completely.
  4. 4Cut puff pastry sheets into 3-inch squares, press into muffin tins, and fill each with 1 tablespoon custard.
  5. 5Bake at 425°F for 15-18 minutes until pastry is golden and custard tops are lightly caramelized.
  6. 6Cool tarts in pan for 5 minutes, then transfer to cooling rack and dust with cinnamon and powdered sugar while warm.
