Portuguese Pastéis de Nata

Flaky, caramelized custard tarts with a crispy phyllo shell and creamy vanilla filling that melt in your mouth.

Ingredients

  • 1 package phyllo dough (thawed)
  • 4 tablespoons butter (melted)
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 3 egg yolks
  • 1/3 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1 pinch salt

Directions

  1. 1Preheat oven to 400°F (200°C). Line a muffin tin with phyllo sheets, brushing each layer lightly with melted butter, and press into the cups.
  2. 2Heat milk and cream in a saucepan until steaming. Whisk egg yolks with sugar, flour, vanilla, cinnamon, and salt until smooth.
  3. 3Slowly pour the hot milk mixture into the egg mixture while whisking constantly, then return to the saucepan and cook over medium heat, stirring, until thickened (about 3 minutes).
  4. 4Let custard cool for 5 minutes, then pour into phyllo cups, filling each three-quarters full.
  5. 5Bake for 15-18 minutes until the phyllo is golden and crispy and the custard tops are lightly caramelized.
  6. 6Cool in the tin for 5 minutes, then remove and serve warm or at room temperature.
