Poulet Yassa

A tangy and savory Senegalese chicken dish marinated in lemon juice and onions, then braised until tender and golden.

Ingredients

  • 1.5 lbs chicken pieces (thighs and breasts)
  • 6 medium onions, sliced
  • 1 cup fresh lemon juice
  • 3 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 2 tablespoons whole grain mustard
  • 1 teaspoon cayenne pepper
  • 1 cup chicken broth
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. 1Combine chicken pieces with half the lemon juice, minced garlic, salt, and pepper in a bowl. Marinate for at least 30 minutes.
  2. 2Heat oil in a large pot over medium-high heat. Remove chicken from marinade and brown on all sides, about 8 minutes total. Set aside.
  3. 3In the same pot, sauté sliced onions until softened, about 5 minutes. Stir in mustard and cayenne pepper.
  4. 4Return chicken to the pot and add remaining lemon juice, chicken broth, and bay leaves.
  5. 5Bring to a simmer, then reduce heat to low. Cover and cook for 35-40 minutes until chicken is very tender.
  6. 6Uncover and simmer for an additional 5-10 minutes to reduce sauce slightly. Taste and adjust seasonings.
  7. 7Serve hot with rice or couscous, pouring the caramelized onion sauce over the chicken.
