Pounded Yam
Creamy, smooth mashed yam with butter and cream, served as a comforting African staple.

Ingredients
- •3 lbs yam, peeled and cubed
- •4 cups water
- •1 teaspoon salt
- •4 tablespoons butter
- •1/2 cup heavy cream or milk
- •1/4 teaspoon white pepper
- •1/4 teaspoon nutmeg
Directions
- 1Bring water to a boil in a large pot and add salt.
- 2Add cubed yam pieces and boil for 15-20 minutes until very tender and easily pierced with a fork.
- 3Drain the yam thoroughly in a colander.
- 4Transfer cooked yam to a large bowl or mortar and begin mashing with a pestle or potato masher until smooth.
- 5Add butter and cream gradually while continuing to pound until the yam reaches a creamy, light texture.
- 6Season with white pepper and nutmeg, mixing well.
- 7Continue pounding for 2-3 minutes more until fluffy and uniform.
- 8Transfer to a serving dish and serve hot with soup or stew.
