Pounded Yam

Creamy, smooth mashed yam with butter and cream, served as a comforting African staple.

Ingredients

  • 3 lbs yam, peeled and cubed
  • 4 cups water
  • 1 teaspoon salt
  • 4 tablespoons butter
  • 1/2 cup heavy cream or milk
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon nutmeg

Directions

  1. 1Bring water to a boil in a large pot and add salt.
  2. 2Add cubed yam pieces and boil for 15-20 minutes until very tender and easily pierced with a fork.
  3. 3Drain the yam thoroughly in a colander.
  4. 4Transfer cooked yam to a large bowl or mortar and begin mashing with a pestle or potato masher until smooth.
  5. 5Add butter and cream gradually while continuing to pound until the yam reaches a creamy, light texture.
  6. 6Season with white pepper and nutmeg, mixing well.
  7. 7Continue pounding for 2-3 minutes more until fluffy and uniform.
  8. 8Transfer to a serving dish and serve hot with soup or stew.
