Prawn Curry
Succulent prawns cooked in a rich, aromatic tomato-based curry with warm spices and coconut milk.

Ingredients
- •500g large prawns, peeled and deveined
- •2 tablespoons vegetable oil
- •1 medium onion, finely chopped
- •3 cloves garlic, minced
- •1 tablespoon ginger, minced
- •2 tomatoes, chopped
- •2 tablespoons curry powder or garam masala
- •1 teaspoon turmeric
- •1 teaspoon red chili powder
- •200ml coconut milk
- •1 cup water or fish stock
- •to taste salt and black pepper
Directions
- 1Heat oil in a large pan over medium heat and sauté onions until golden brown, about 5 minutes.
- 2Add minced garlic and ginger, cook for 1 minute until fragrant.
- 3Stir in curry powder, turmeric, and chili powder, cooking for 1-2 minutes to bloom the spices.
- 4Add chopped tomatoes and cook for 3-4 minutes, stirring occasionally.
- 5Pour in coconut milk and water, bring to a gentle simmer and season with salt and pepper.
- 6Add prawns to the curry and cook for 5-7 minutes until they turn pink and are cooked through.
- 7Taste and adjust seasonings, then serve hot with steamed rice or naan bread.
