Prawn Curry

Succulent prawns cooked in a rich, aromatic tomato-based curry with warm spices and coconut milk.

Ingredients

  • 500g large prawns, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tomatoes, chopped
  • 2 tablespoons curry powder or garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon red chili powder
  • 200ml coconut milk
  • 1 cup water or fish stock
  • to taste salt and black pepper

Directions

  1. 1Heat oil in a large pan over medium heat and sauté onions until golden brown, about 5 minutes.
  2. 2Add minced garlic and ginger, cook for 1 minute until fragrant.
  3. 3Stir in curry powder, turmeric, and chili powder, cooking for 1-2 minutes to bloom the spices.
  4. 4Add chopped tomatoes and cook for 3-4 minutes, stirring occasionally.
  5. 5Pour in coconut milk and water, bring to a gentle simmer and season with salt and pepper.
  6. 6Add prawns to the curry and cook for 5-7 minutes until they turn pink and are cooked through.
  7. 7Taste and adjust seasonings, then serve hot with steamed rice or naan bread.
