Directions
- 1Preheat oven to 375°F and brush four muffin cups generously with melted butter.
- 2Press one tortilla into each cup, folding edges to form a rustic pastry shell.
- 3Brush tortilla shells with remaining butter and bake 8 minutes until lightly crisp.
- 4Wilt spinach in a skillet with oil, season with salt, pepper, and red chili flakes.
- 5Whisk eggs with heavy cream, salt, and pepper until smooth and well combined.
