Prune Cake

Ingredients
- •1 cup pitted prunes, chopped
- •1 cup boiling water
- •1/2 cup butter, softened
- •1 cup granulated sugar
- •2 large eggs
- •1 3/4 cups all-purpose flour
- •1 teaspoon baking soda
- •1/2 teaspoon salt
- •1 teaspoon vanilla extract
- •1/2 teaspoon ground cinnamon
- •1/4 teaspoon ground nutmeg
Directions
- 1Pour boiling water over chopped prunes and let sit for 10 minutes to soften, then drain well.
- 2Preheat oven to 350°F and grease a 9-inch round cake pan.
- 3Cream together butter and sugar until light and fluffy, then beat in eggs one at a time.
- 4In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- 5Alternately add dry ingredients and vanilla extract to the butter mixture, stirring until combined.
- 6Fold in the softened prunes and pour batter into prepared pan.
- 7Bake for 35-40 minutes until a toothpick inserted in the center comes out clean.
- 8Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
