Ingredients

  • 1 cup pitted prunes, chopped
  • 1 cup boiling water
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Directions

  1. 1Pour boiling water over chopped prunes and let sit for 10 minutes to soften, then drain well.
  2. 2Preheat oven to 350°F and grease a 9-inch round cake pan.
  3. 3Cream together butter and sugar until light and fluffy, then beat in eggs one at a time.
  4. 4In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  5. 5Alternately add dry ingredients and vanilla extract to the butter mixture, stirring until combined.
  6. 6Fold in the softened prunes and pour batter into prepared pan.
  7. 7Bake for 35-40 minutes until a toothpick inserted in the center comes out clean.
  8. 8Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
