Puff-Puff (West African Fried Dough)

West African yeasted dough balls fried until bronzed outside and airy within, lightly sweetened and scented with nutmeg.

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp instant yeast
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 1/2 cups warm water
  • 4 cups vegetable oil for frying

Directions

  1. 1Mix flour, sugar, yeast, nutmeg, and salt in a large bowl.
  2. 2Stir in warm water until a thick, sticky batter forms.
  3. 3Cover the bowl and let the batter rise for 60 minutes until doubled and bubbly.
  4. 4Heat vegetable oil to 350°F (175°C) in a deep pot.
  5. 5Drop rounded spoonfuls of batter into the oil and fry in batches for 4–5 minutes until evenly brown.
  6. 6Drain the puff-puff on paper towel and serve warm.

💡 Keep the batter sticky rather than kneadable; a firm dough produces dense centres instead of the airy interior puff-puff should have.
