Pumpkin Cookies

Ingredients
- •1 can (15 oz) pumpkin puree
- •1 cup granulated sugar
- •1/2 cup vegetable oil
- •1 large egg
- •1 teaspoon vanilla extract
- •2 cups all-purpose flour
- •1 teaspoon baking powder
- •1 teaspoon baking soda
- •2 teaspoons ground cinnamon
- •1/2 teaspoon ground ginger
- •1/4 teaspoon ground cloves
- •1/4 teaspoon salt
Directions
- 1Preheat oven to 350°F and line baking sheets with parchment paper.
- 2In a large bowl, mix together pumpkin puree, sugar, oil, egg, and vanilla extract until well combined.
- 3In another bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt.
- 4Fold the dry ingredients into the wet ingredients until just combined.
- 5Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
- 6Bake for 18-22 minutes until the tops are golden and a toothpick inserted in the center comes out clean.
- 7Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
