Ingredients

  • 2 cups graham cracker crumbs
  • 6 tablespoons melted butter
  • 2 tablespoons sugar
  • 1 can (15 oz) pumpkin puree
  • ¾ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 2 large eggs
  • 1 cup evaporated milk

Directions

  1. 1Preheat oven to 350°F and line a 9x13-inch baking pan with parchment paper.
  2. 2Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar, then press firmly into the bottom of the prepared pan. Bake for 5 minutes.
  3. 3In a large bowl, whisk together pumpkin puree, ¾ cup sugar, cinnamon, ginger, nutmeg, and cloves until combined.
  4. 4Add eggs and evaporated milk to the pumpkin mixture and whisk until smooth.
  5. 5Pour the pumpkin mixture over the crust and bake for 40-45 minutes, until a toothpick inserted near the center comes out clean.
  6. 6Cool completely on a wire rack, then refrigerate for at least 2 hours before cutting into bars and serving.
