Pupusas
Delicious Salvadoran stuffed corn cakes filled with cheese and beans, served with a tangy pickled vegetable topping.

Ingredients
- •2 cups masa harina (corn flour)
- •1.5 cups warm water
- •1 teaspoon salt
- •1 cup refried beans
- •1.5 cups shredded mozzarella cheese
- •1/2 cup chopped loroco (optional, or substitute with cilantro)
- •2 tablespoons vegetable oil
- •2 cups cabbage, thinly sliced
- •1/2 cup white vinegar
- •1 jalapeño, sliced
Directions
- 1Mix masa harina, warm water, and salt in a bowl until you have a soft dough consistency, similar to playdough.
- 2Prepare the filling: combine refried beans, cheese, and loroco in a small bowl.
- 3Make the curtido: combine cabbage, vinegar, jalapeño, and a pinch of salt in a jar and let sit for 10 minutes.
- 4Wet your hands and take a golf ball-sized portion of dough, flatten it, add 2 tablespoons of filling to the center, fold edges up, and gently flatten into a thick disc.
- 5Heat oil in a skillet over medium-high heat and cook pupusas 3-4 minutes per side until golden brown and crispy.
- 6Serve hot pupusas immediately with a generous scoop of curtido on top.
