Crispy, golden-brown deep-fried Indian bread that puffs up beautifully when cooked.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 tablespoon vegetable oil
  • 3/4 cup warm water
  • 2 cups vegetable oil for frying

Directions

  1. 1Mix flour, salt, and baking powder in a bowl.
  2. 2Add 1 tablespoon oil and gradually add warm water, kneading until you form a soft dough.
  3. 3Cover the dough and let it rest for 15 minutes.
  4. 4Divide dough into 12 equal balls and roll each into a thin circle about 4 inches in diameter.
  5. 5Heat oil in a deep pan over medium-high heat until it reaches 350°F (175°C).
  6. 6Carefully slide one puri into the hot oil; it will sink then float and puff up in 10-15 seconds.
  7. 7Flip and cook the other side for another 5 seconds until golden brown.
  8. 8Remove with a slotted spoon and drain on paper towels. Serve hot.
