Crispy, golden-brown deep-fried Indian bread that puffs up beautifully when cooked.

Ingredients
- •2 cups all-purpose flour
- •1/2 teaspoon salt
- •1/4 teaspoon baking powder
- •1 tablespoon vegetable oil
- •3/4 cup warm water
- •2 cups vegetable oil for frying
Directions
- 1Mix flour, salt, and baking powder in a bowl.
- 2Add 1 tablespoon oil and gradually add warm water, kneading until you form a soft dough.
- 3Cover the dough and let it rest for 15 minutes.
- 4Divide dough into 12 equal balls and roll each into a thin circle about 4 inches in diameter.
- 5Heat oil in a deep pan over medium-high heat until it reaches 350°F (175°C).
- 6Carefully slide one puri into the hot oil; it will sink then float and puff up in 10-15 seconds.
- 7Flip and cook the other side for another 5 seconds until golden brown.
- 8Remove with a slotted spoon and drain on paper towels. Serve hot.
