Québécois Hot Chicken Sandwich

Ingredients

  • 8 slices white bread
  • 450 g cooked chicken breast, sliced
  • 1 packet, prepared to yield about 400 ml gravy mix
  • 250 g frozen peas

Directions

  1. 1Prepare the gravy according to the packet and keep it hot.
  2. 2Warm the sliced chicken through in a ladleful of the gravy.
  3. 3Cook the frozen peas three minutes in salted water and drain them.
  4. 4Lay a slice of bread on each plate and pile the chicken on top.
  5. 5Cover with a second slice of bread and cut the sandwich corner to corner.
  6. 6Pour hot gravy generously over the whole plate and put the peas beside it.

💡 The gravy goes over the sandwich, not beside it. It is meant to soak the bread through, which is the entire point of the dish.
