Québécois Hot Chicken Sandwich

Ingredients
- •8 slices white bread
- •450 g cooked chicken breast, sliced
- •1 packet, prepared to yield about 400 ml gravy mix
- •250 g frozen peas
Directions
- 1Prepare the gravy according to the packet and keep it hot.
- 2Warm the sliced chicken through in a ladleful of the gravy.
- 3Cook the frozen peas three minutes in salted water and drain them.
- 4Lay a slice of bread on each plate and pile the chicken on top.
- 5Cover with a second slice of bread and cut the sandwich corner to corner.
- 6Pour hot gravy generously over the whole plate and put the peas beside it.
💡 The gravy goes over the sandwich, not beside it. It is meant to soak the bread through, which is the entire point of the dish.
