Queso Fundido

Ingredients
- •8 oz chorizo sausage, diced
- •2 cups shredded Oaxaca cheese
- •1 cup shredded Monterey Jack cheese
- •1/2 cup diced poblano pepper
- •1/4 cup diced jalapeño
- •1/2 cup heavy cream
- •2 cloves garlic, minced
- •1/4 teaspoon cumin
- •to taste salt and pepper
- •2 tablespoons fresh cilantro, chopped
Directions
- 1Cook diced chorizo in a skillet over medium heat until browned, about 5 minutes, then drain excess fat.
- 2Add minced garlic, poblano pepper, and jalapeño to the chorizo and sauté for 2 minutes until fragrant.
- 3Combine shredded Oaxaca and Monterey Jack cheeses in a cast-iron skillet or baking dish.
- 4Pour heavy cream over the cheese and stir in the cooked chorizo mixture, cumin, salt, and pepper.
- 5Heat over medium-low heat, stirring occasionally, until cheese is completely melted and creamy, about 5 minutes.
- 6Transfer to a serving dish, garnish with fresh cilantro, and serve immediately with warm flour or corn tortillas.
