Queso Fundido

A warm, melty cheese dip with chorizo and peppers, perfect for tearing into warm tortillas.

Ingredients

  • 8 oz chorizo sausage, diced
  • 2 cups shredded Oaxaca cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced poblano pepper
  • 1/4 cup diced jalapeño
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1/4 teaspoon cumin
  • to taste salt and pepper
  • 2 tablespoons fresh cilantro, chopped

Directions

  1. 1Cook diced chorizo in a skillet over medium heat until browned, about 5 minutes, then drain excess fat.
  2. 2Add minced garlic, poblano pepper, and jalapeño to the chorizo and sauté for 2 minutes until fragrant.
  3. 3Combine shredded Oaxaca and Monterey Jack cheeses in a cast-iron skillet or baking dish.
  4. 4Pour heavy cream over the cheese and stir in the cooked chorizo mixture, cumin, salt, and pepper.
  5. 5Heat over medium-low heat, stirring occasionally, until cheese is completely melted and creamy, about 5 minutes.
  6. 6Transfer to a serving dish, garnish with fresh cilantro, and serve immediately with warm flour or corn tortillas.
