Ingredients

  • 1 cup white quinoa, rinsed
  • 1 cup water
  • 2 cups whole milk or oat milk
  • 1 cinnamon stick
  • 3 tbsp brown sugar or honey
  • 1 tsp vanilla extract
  • 1 pinch pinch of salt
  • 1 fresh banana, sliced, for serving
  • 1 cup fresh strawberries, halved, for serving
  • ½ tsp ground cinnamon, for dusting

Directions

  1. 1Combine rinsed quinoa and water in a medium saucepan over medium heat; bring to a boil, then reduce heat and simmer for 10 minutes until water is mostly absorbed.
  2. 2Pour in milk and add cinnamon stick, brown sugar, vanilla, and salt; stir well.
  3. 3Simmer over low heat, stirring often, for 12–15 minutes until the porridge is thick and creamy — it should fall slowly off a spoon.
  4. 4Remove cinnamon stick and taste, adding more sugar if desired.
  5. 5Spoon into bowls and top with sliced banana and strawberries.
